Generally speaking, we have a healthy lifestyle when it comes to food and working out. However, this winter was kind of a major splurge on all the fatty food you can possibly imagine. Eating while watching series was our favorite activity. But then, after our trip to Paris where we ate absolutely delicious food 80% of the time, and with swimsuit season right around the corner, we got a wake up call to re-adjust ourselves to our previous healthy lifestyle.

Healthy doesn’t mean not yummy. This recipe requires very little time and effort and contains fresh and healthy ingredients. Plus, if you happen to have a casserole that is ovenproof like this awesome CRISTEL one we used, you’re all set! Easy recipe with not too much dishes to wash afterwards.

Let’s start by talking about that casserole shall we?

This Cristel casserole was Jean’s dream. It is made with INOX which heats all sides equally and preserves the taste of the ingredients. It can be used in the oven as well so no need to transfer your casserole ingredients to an oven dish. A removable handle is packed with it for you to move the casserole around without burning your hands.

Healthy Shrimp and Feta Casserole Recipe

What you’ll need:


  • 6 scallions (or spring onions), diced
  • 2 garlic cloves, coarsely chopped
  • 2 ripe tomatoes, cut in cubes
  • 2 cm fresh ginger, grated
  • 1 Tbsp pomegranate molasses
  • 4 Tbsp olive oil
  • 1 tsp chili flakes
  • 800 g fresh shrimps, peeled and cleaned
  • A handful of fresh coriander
  • 60 g feta cheese

How to make it:

In a casserole, throw in the scallions, garlic, tomatoes, ginger, pomegranate molasses, chili flakes and 3 Tbsp of olive oil. Cook on medium heat until a sauce is formed

Turn off the fire, top everything with the shrimps, coriander and feta cheese.

Add 1 Tbsp of olive oil on top and place in the oven for a maximum of 10 minutes or until the feta cheese is golden and the shrimps are cooked.
