I’ve been a serious pasta lover for as long as I can remember. So when I’ve been good all week, eating healthy dishes with so very little carbohydrates in them, I look forward to my pasta dish of the week, that I’ll be sharing with you from now on in the Pasta Series. This specific one if for days where you have no time whatsoever to cook yourself a nice meal and get on with your busy day. So for you not to revert to junk food or fast meals that won’t leave you satiated, here’s a quick and easy fix. This is for all you students and hard-working (of all sorts) busy people out there.
What you’ll need (for 2 people)
– Your choice of Pasta
– A pack of Cherry tomatoes – cut all tomatoes in half
– Olive oil
– Salt and Pepper
– 2 Cloves of Garlic, chopped
– Fresh red Chili flakes for spicy lovers
– Basilica – fresh or dried
– Grated Parmesan cheese, if you wish to top your pasta with it
1) Cook your pasta in a boiler with a bit of olive oil for it not to stick
2) In another saucepan, heat the olive oil and the garlic and season it with salt, pepper and chili flakes
3) When the garlic starts to cook, top it all with the cherry tomatoes and season with salt, pepper and basilica. Then wait until the tomatoes release their juices and begin to form a paste
