7 Fresh Salads For Hot Summer Days

For no apparent reason, I became the go-to person for friends and colleagues when they need advice on healthy but enjoyable eating. For the past month and mainly because of the excessive heat, I’ve been basically recommending salads. All types of salads, containing all types of proteins and creative ingredient combinations.

I admit this requires a lot of careful and time-consuming shopping and a lot of washing and prep-ing, but it’s worth it. You’ll feel full, not so bloated, fresh and healthy.

In my opinion, a nice fulfilling salad for lunch should contain the following components:

  • Any type of lean protein: my favorites are turkey breast, grilled chicken breast, grilled calamari, eggs and tuna (raw or canned)
  • Greens: my favorites are rocket leaves, french lettuce, lollo rosso and chives – my advice would be to mix all kinds of greens together
  • Healthy fats: my favorites being avocado, almonds, and black olives
  • A type of fruit: generally tomatoes, but it can also be kiwi (surprisingly good), cherries, strawberries or oranges
  • A simple but delicious dressing: my favorite being dijon mustard, melted in lemon with olive oil
  • Pepper: I might be leaving salt aside because it’s already present in most of the ingredients above, but pepper is a must for me
  • Chili flakes or Chia seeds: these are defintiely optional but I’ve been sprinkling them everywhere lately as they’re healthy and full of fibers

Without further ado, here are 7 salad recipes to inspire you. I suggest you make one for every day of next week.

Healthy And Refreshing Popsicles In 3 Simple Steps

I think it’s safe to say we can all feel global warming taking its toll on our planet. The past few days have been hotter than ever. I don’t remember ever having a similar heat wave in Lebanon except for one time only, a few years ago. The best thing we can all do is stay in air-conditioned spaces until we can soak our bodies in water all day long on Saturday. I suggest you also make these refreshingly delicious popsicles to go with your floating air mattress.

The recipe is composed solely of fruits and requires 3 small and simple steps. The only thing you need to “invest” in is a Popsicle mold, which can be found in big supermarkets.

Healthy and Refreshing Popsicle Recipe

What you’ll need (for 8 medium popsicles):

  • 1/2 watermelon
  • 1 Plum, sliced
  • 1 Peach, sliced
  • 1 Kiwi, sliced

How to make it:

  1. Crush the watermelon with a blender handle (or with a manual crusher if you don’t have one).
  2. Place the sliced fruits in the molds and pour the watermelon juice over a sifter on top.
  3. Cover with sticks and freeze for 2 hours (or overnight if you’re making them in advance).

August Bucket List

Despite the fact that it’s burning hot, August has to be a month I love given that it’s the month I was born in (YEAY!). Those of you who were also born in August and the other ones who know of a person who was born in August, must be aware of how much we love our birthdays. I thought my love for that day would fade away with time, but I find myself with the same excitement as when I was a kid.  It’s just one of the things in life that make me happy.

This month is full of plans, including lazy days at the beach and barbecues with friends in the mountains. Although I won’t be able to take time off from work, I plan on making the most of the hottest month of summer before everything calms down again and our lives get back to a somewhat normal routine. So here goes.

Breadonbutter’s August Bucket List

  1. Get back into DIY projects. Since we lost my grandma last Christmas, I’ve been trying to keep her values through the things she used to do herself. It certainly were little things but with a huge impact on everyone.
  2. Appreciate the things we have in this country instead of focusing on what we don’t have (which is plenty, grant it).
  3. Get active again on Pinterest. I just love this platform but I’ve been setting it aside lately.
  4. Keep on working hard. My main resolution for 2015 was to work hard and I’m keeping it.
  5. Start working out again. Swimming might be my only option, and on weekends only.
  6. Cook cakes again. I miss baking so much it hurts.
  7. Eat healthy 85% of the time as I have come to really like it.
  8. Drink at least 1.5 liters of water a day. It shouldn’t be that hard with the current temperature outside.
  9. Re-focus on my blog. My bad for working too much on other things.
  10. Write somewhere outside the blog.
  11. Create rituals. I’ve been enjoying many simple things lately, like an evening bbq with friends by the beach, so I’m planning on keeping those wonderful gatherings alive.
  12. Plan a kick-ass birthday (Obviously!) 😀
  13. Laugh out loud more often.
  14. Collaborate with more people.
  15. Stay nice. With everything happening around us, we tend to be aggressive and on the defensive. But I won’t let the heat and garbage get to me!

A Weekend in Batroun: 10 Things To Do In The Region

Sunny weekends are still ahead of us and we’re all looking for creative things to do. One of my favorite places in Lebanon is Batroun. The beautiful scenery brings you back refreshed and ready for another busy week after the weekend. There are so many things to do there other than lying on the rocks and soaking up the sun. Be it during summer or on sunny winter weekends, Batroun and its surroundings is a great destination for all kinds of activities.

Here are some ideas around the region for weekends ahead. There’s a little bit of everything for everyone!

When I say Batroun, I’m also talking about its surrounding towns, like Tannourine, Chekka, Anfeh, Douma and others. So here goes:

1- Tannourine: Start with an early morning hike in the beautiful reserve. The Tannourine forest is actually the biggest one. It starts in the Batroun casa and ends in the Bechareh casa.

2- Saydet el nourieh: On your way down from Tannourine to the beach, pass by Saydet el Nouriyyeh for a spiritual hour and a breathtaking view on the shore.

3- Make sure to pass by ‘Helmeh’ for a nice and refreshing lemonade!

4- Visit Batroun’s old town, it’s beautiful and untouched.

5- You can now go lie down on the rocks and take a dip in the sea. There’s a lot of choice when it comes to which beach you can go to. You can choose between Bonita Bay, White Beach, and Pierre and Friends, or go to Joining beach or Dany’s Bar for a less mainstream experience and great fish.

6- Make sure you stay there till sunset, you won’t regret it a single minute. Those places are great for those who love fishing as well.

7- If you choose to sleep and spend the weekend there, two of the best places I’ve been to are Beit el Batroun and Mayouli. Beit el Batroun is simply the loveliest and most relaxing place. Mayouli is a bit different than Beit el Batroun as it’s more of an ecological place, with the freedom to have barbecues in a corner of the garden.

8- Go up to one of Batroun’s vineyards the next day for some wine tasting. Ixsir has the most magical setting, and Aurora is another great choice.

9- Have a late BBQ lunch on the rocks. You can find a lot of public beaches with clear blue water and settle there.

10- For a nice late afternoon drink, try Colonel Beer. The setting is relaxed and the beer is excellent!

Chateau Sainte Andree: When Family And Wine Mix

When my sister was here visiting, we had a great day at the beach around a BBQ and excellent wine (Chateau Sainte-Andrée) brought by John-Peter, a great friend of ours. I was nicely surprised by this delicious wine and I was fascinated by its story.

John-Peter’s father Paul Sacre has been a wine amateur for as long as he can remember. He’s always had his own wine cellar filled with bottles of wine from all over the world. Some of the bottles were even very old (with one of them dating from 1947!).

Paul used to spend his summers at his aunt’s in Mradiye, a small village next to Ghbele in North Lebanon. He loves this region and that’s why he ended up buying a 25,000 square meter land there and started making his own wine. Like any success story, this started as a hobby. During the first 2 years, Paul was making wine to have fun and enjoy it with his family. He then started to sell it in fairs and wine tasting exhibitions.

The Wine

The vineyard produces almost 8,000 bottles per year: red (3 cuvées), white, rosé, fruity (peach) and 6 tastes of liquor.

The quantity they produce is not large but their aim is to produce the best quality there can be. Paul is helped by an oenologist for the mixes, the cork is wooden rather than silicon, which is better to preserve the wine’s quality and to be able to leave it in cellars for years (up to 12!).

The red wines are placed in French and Californian oak barrels for 8 to 16 months instead of aluminum or stainless steel which gives it a nice aroma.

Andree is the name of Paul’s wife (thus the name Sainte-Andrée) and each red wine cuvée has the name of his 3 children: Peter, Lynn and Laura.

It’s also worth mentioning that they also produce organic honey from the Jabal Moussa reserves that come from the pine trees, oak trees and fir trees. And they also produce their own vegetables (but those are not sold).

Shrimp Tortillas Straight From The Grill

Our ‘thing’ this summer is – as you might have guessed – having barbecues by the sea. When I wrote about how to beat the Sunday Blues, one of the recommendations was to stay out late on Sunday. Who sleeps early anymore anyway, right? On one of our BBQs, we made these amazing shrimp tortillas that all of our guests loved. This recipe was cooked straight out of the grill by the sea on a nice summer day. It’s easy and delicious! I strongly recommend it to add an extra touch to a simple BBQ.

Shrimp Tortillas Recipe

What you’ll need (for 6 persons):

  • Fresh shrimps (count 8 medium ones per person)
  • A bunch of fresh coriander leaves
  • 3 fresh red chili peppers
  • 2 medium shallots
  • Juice of 1 lime
  • Mixed spices: we used Jamie Oliver’s salt and chili mix
  • 12 Tortilla bread of your choice (2 tortillas per person)

For the sauce

  • 3 Tbsp Mayonnaise
  • 3 Tbsp Ketchup
  • 1 Tbsp Worcestershire sauce
  • Juice of 1 lime
  • Paprika, to taste
  • Chili powder, to taste (optional)

How to make it:

  • Marinate the shrimps in the lime juice and mixed spices, then place them on the grill.
  • While they grill, make the sauce by mixing all of the ingredients together until well-combined.
  • When they’re done, place the shrimps on a tortilla bread and sprinkle the sauce on top.
  • Top everything with fresh red chili, coriander leaves and shallots.

July Bucket List

Today is the 1rst of July and I’m still wondering how Christmas has come and gone. Time does fly, which puts pressure on our goals and the means we use to achieve them. The last week of June has been life-changing career-wise and even though I’m not one to regret any decision I make, I hope I took a sound one. I’ve embarked on a new adventure hoping that it will be a huge step towards my ultimate goal. I’ll elaborate more one day, but for now, all I want is to share a new bucket list.

June’s felt like a year rather than a month. Summer is definitely on with bbqs and long summer days. I started my Whole 30 challenge, which has been quite a ride until now (you can read about it here and here). We had the chance to meet Michelin-starred Chef Greg Malouf (read more about him here), and we discovered new recipes and ingredients. I also worked a lot on my photography skills, which made me happy, and last but not least, we’ve been watching a whole lot of sunsets.

  1.  Work hard, even though it’s July, a month that screams vacation
  2. Read more instead of watching TV and scrolling down my phone
  3. Cook more without giving excuses – I know I’ve been short on recipes lately and I promise to make it up
  4. Finish my Whole 30 and reintroduce various food groups while controlling my cravings – it has been hard sometimes, I must admit
  5. Watch at least one old movie – because I love old movies and I think they enrich our souls. My favorites are Cinema Paradiso, La Vita e Bella, Breakfast at Tiffany’s and Louis de Funes’ Pouic Pouic
  6. Discover a new place in Lebanon
  7. Bake more cakes
  8. Be more organized
  9. Run more often
  10. Discover new music

The Importance Of Seasoning: Grilled Fish With Coriander Sauce

My favorite day of the week (food-wise) is the day we eat fish. I love how there are so many ways you can cook it and enjoy the variety of flavors. In my opinion, the best way to eat fish is raw – in order of preference, raw white fish, followed by salmon then tuna- but grilled has its perks because you get to be creative with the sauces and seasoning. When you’re in a hurry, you can stuff the fish with rosemary leaves and lemon slices, then throw it in the oven and take it out grilled and ready. If you have time however, I greatly suggest you get creative with the seasoning. Last Saturday, we came up with this absolutely lip-smacking sauce to have your grilled fish with. Here’s the recipe.

Grilled Fish With Coriander Sauce

What you’ll need (for 2 persons):

  • 2 medium-sized fish of your choice
  • 3/4 cup lemon juice
  • 3 Tbsp olive oil
  • 2 garlic cloves
  • 2 tsp fresh ginger
  • A bunch of fresh coriander leaves
  • Salt, to taste
  • Fennel, sliced (optional)

How to make it:

  1. Line an oven dish with parchment paper or aluminum foil and place the fish on top and slice them in some places.
  2. In a small blender, place the coriander leaves, garlic cloves and ginger and pulse until they are all chopped and combined.
  3. Add half of the lemon juice and olive oil and pulse until combined. Then add the other half of the lemon and olive oil, adding salt. Pulse until combined.
  4. Add half the sauce on top of the fish, place the fennel around it and enter the dish in the oven for around 15 minutes or until the fish are completely cooked.
  5. Serve with fresh sauce aside.

I tried the same sauce with raw salmon and it was perfection! And it’s all whole 30 proof 😀
